Baked Dutch Peach Dessert
Description: This is a very simple dish, quick to make & tasty. Serve it hot with vanilla ice-cream or custard
Time: 25 - 30 Min
Difficulty: easy

Ingredients:

1¼ cups Four
¼ teaspoon Salt
2 teaspoons Baking Powder
3 Tablespons Butter/ Margarine
5 Tablespoons Sugar
1 Egg
2 Tablespoons Milk
1 Tin Canned peach slices
1 teaspoon Cinnamon
½ cup Peach syrup (from canned peaches)

Preparation:

Grease 7"X10" baking pan

Preheat oven to 220C

Instructions:

Sift together flour, salt & baking powder into a bowl.
Rub the butter/margarine in finely
Add 3 tablespoons of the sugar.
Beat the egg & milk together and add to the dry ingredients.
Spread the mixture into pan
Arrange the peach slices on top of the mixture.
Mix the cinnamon with the remaining sugar and sprinkle over the peaches.
Pour the peach syrup over the peaches.
Bake at 220 degrees Celsius for 25 - 30 minutes

Salsa
Description: It will make a nice sauce for a plate of pasta.

Metric units
Serving Size: 6 people
Difficulty: easy

Ingredients:

500g chicken breast cut into chunks
500g mushrooms cut into chunks
1 big onion finely chopped
300g ham or bacon finely chopped
400g tomato pulp
400g tomato juice
100ml of fresh cream / single cream

Preparation:

Instructions:

Fry the onion in a little oil until
Put in the chicken
When golden brown put the mushrooms and bacon.
Simmer in the pulp and the juice
When ready put in the fresh cream.

Chocolate pudding
Description: This is not a low cholesterol recipe.
Difficulty: easy

Ingredients:

1/2 cup granulated, or brown sugar
1/3 cup powdered, unsweetened, cocoa
3 tablespoons cornstarch (cornflour)
3 cups cold milk, your preference.
1 or 2 egg yolks

Instructions:

Mix sugar, cocoa and cornstarch ingredients in a heavy, 2 lt capacity saucepan
Add milk while stirring
Over medium heat bring to boil, stirring, then gently boil for 1 minute.
Beat egg yolks
Add about 1 cup of the hot milk mixture to the yolks, stirring
Add this to the milk mixture.
Cook over low heat, stirring. DO NOT BOIL
Cook for about 1 minute, or til thick
Stir in vanilla
Let cool.

Brownie Bites
Description: These make wonderful desserts or school baking
Serving Size: Makes 24 brownies
Time: 10 - 12 Minutes
Difficulty: easy

Ingredients:

1/4 c Butter
1/3 Brown sugar
3 oz semi sweet chocolate
1/2 tsp Vanilla
1 Egg ,lightly beaten
1/3 c Flour
24 Chocolate Rosebuds

Preparation:

Preheat oven to 350F (180C)

Instructions:

In saucepan , melt sugar,butter and chocolate over low heat, stirring ,until chocolate is just melted.
Remove from heat and let cool 1 minute.
Blend in vanilla and egg.
Gently fold in flour just until blended.
Spoon into tiny paper baking cups.
Bake for 10-12 minutes or until set.
Remove from oven
Set Rosebud on top of each. let cool.

Honey Pumpkin Bread
Description: here is a yearly favorite of our families during the holidays
Time: 50-60 minutes
Difficulty: easy

Ingredients:

3 1/2 C. all purpose flour
2 tsp. baking soda
1 TBSP ground Cinnamon
1 TBSP freshly grated nutmeg
2 C. sugar
3/4 C. wildflower or pale amber honey
1/2 C. water
1 C. vegetable oil
2/3 C. canned or freshly cooked and pureed pumpkin
4 large eggs, beaten
1 C. chopped pecans
1/2 C. golden raisins
1/2 C. dried sour cherries

Preparation:

Preheat oven to 325 degrees F. Greas 2 (9 by 5 by 3 inch) loaf pans and set aside.

Instructions:

Sift the flour, baking soda, salt, cinnamon, nutmeg, and sugar together into a large bowl.
With a wooden spoon, stir in honey, water, oil, pumpkin, and eggs until you have a smooth batter.
Fold in pecans, raisins, and dried sour cherries.
Pour the batter into prepared pans and bake for 50 to 60 minutes, or until toothpick inserted in center of loaf comes out clean.
Cool in the pans on a wire rack

Sweet and Sour Pork Steaks
Description: United States measurements
These pork steaks are delectably tangy and tender when prepared in the Crock-Pot.
Difficulty: easy

Ingredients:

4 - 6 pork shoulder steaks
1 tbsp cooking oil
1 can (15 ounces) crushed pineapple
1/2 cup chopped green pepper
1/2 cup water
1/3 cup brown sugar
2 tbsp ketchup
1 tbsp quick-cooking tapioca
3 tsp soy sauce
1/2 tsp dry mustard

Instructions:

In a skillet brown pork steaks on both sides in hot oil. Drain fat. Transfer to any size Crock-Pot.
In a bowl, combine pineapple, green pepper, water, brown sugar, ketchup, tapioca, soy sauce, and dry mustard. Pour over pork steaks.
Cover and cook on Low for 8 to 10 hours or on High 4 to 5 hours.
Serve over rice if desired. Serves 4 to 6

Spinach and Madera
Description: United States measurements
Difficulty: easy

Ingredients:

2 lb spinach
1/4 cup Madera
2 tablespoons of butter
1/4 cup heavy cream
1/2 cup cooked mushrooms
salt to taste
1 tablespoon flour

Instructions:

Wash spinach and put it into kettle to cook, don't add water.
Cover and cook for about 1 minute. Drain well and set aside.
Cook mushrooms, then add them to spinach. Also add Madera, butter, cream and flour, salt to taste, mix everything well and heat it through. Serves 4

Jack Daniel's Chicken
Description: United States measurements
Difficulty: easy

Ingredients:

1 pound boneless chicken
1 & 1/2 cups Jack Daniel's Old No. 7 (or your favorite whiskey)
a dash of salt & pepper

Instructions:

Place the chicken in a covered dish, pouring all of the JD over the chicken, and leave it in the fridge for 4 or 5 hours. After 4 or 5 hours have passed, remove the chicken from the fridge and dish & put it in a skillet, pouring the JD from the dish onto the chicken. Sprinkle a bit of salt and pepper on all sides of the chicken, and cook on medium heat until the chicken is no longer pink in the middle. Serve with your favorite dish that compliments a "sweet" meat.

Description: United States measurements
Difficulty: easy

Ingredients:

1-14.5oz can crushed tomatoes or 3 large tomatoes, chopped
5 or 6 large jalapeno peppers, sliced
1 clove of garlic or 2 TBSP garlic powder
1 medium onion, sliced
1/4 cup of water
2 TBSP onion powder (optional)
1/4 cup cilantro, chopped (optional)

Instructions:

In a blender [preferable] or food processor, add the onion, jalapeno peppers, cilantro (optional), and water. Blend until completely mixed. Then add the garlic or garlic powder and onion powder (optional), and blend for 30 seconds. After that, add the can of crushed tomatoes [or 3 large chopped tomatoes], and blend until thoroughly mixed (when all contents are an even color). Remove the lid of blender or food processor [and test to make sure it's not too hot for you; if it is, reduce the number of jalapenos], and pour into an appropriately sized jar or covered bowl. Best served with your favorite Mexican or Tex-Mex dish, over any sort of beef or chicken, or with tortilla chips.

You can add or take away as many of the veggies as you want. It would all depend on your family size. I have 4 in mine and there were hardly any leftovers.
