Lemon Cake
Description: Italian measurements
Difficulty: easy

Ingredients:

250 grams of butter
200 grams of white sugar
4 eggs
1 vial of lemon aroma
1 hint of salt
1 lemon
350 g of white flour
4 teaspoons of Backing Powder
powdered sugar

Instructions:

Cream the butter and add sugar, eggs, lemon aroma, salt and the lemon grated rind.
Mix ingredients and then add flour, lemon juice and baking powder.
Pour the dough in a round pan (diameter 24 cm) and put it in the oven.
Bake for 50-60 minutes.
When the cake is ready, remove it from oven, let it cool down and cover it with powdered sugar.

Salsa Chicken

Difficulty: easy

Ingredients:

4 boneless chicken breasts
2 cups of lemon juice mixed with 2 cups water
2 Tbsp Basil
2 Tsp crushed garlic
1/2 cup chopped scallions

Preparation:

Marinate (all ingredients listed are for marinade) for at least 20 minutes 4 boneless chicken breasts.

Instructions:

Remove chicken from the marinade and bake at 350 degrees until the chicken is cooked through (usually around 20-30 minutes).
Serve with Pace chunky style picante salsa and spanish or cajun rice and vegetable of choice.

Brownies

Difficulty: easy

Ingredients:

100 grams of butter
1,5 deciliters of white sugar
2 eggs
2 teaspoons "vanilla sugar"
1/3 teaspoon baking powder
2 tablespoons of cocoa (I only took 1, that was perfect)
1 deciliter of wheat meal
2 small bags of walnut seeds
Icing sugar

Instructions:

Mix butter and sugar. Add 1 egg, mix, add the other egg and mix.
Blend in "vanilla sugar", baking powder, cocoa and wheat meal.
Chop the walnuts and add.
Bake on the lowest "shelf" in the oven at 175°C for 20 minutes.
Sprinkle the icing sugar on top afterwards.

Low-Fat Brownies

Ingredients:

1/2c SR Flour
1/2c Plain Flour
3/4c Cocoa
1 1/4c Sugar
2 Eggs
1ts Carb soda
2ts Vanilla
140g Puree apple (or any other fruit)
200ml Yogurt
2Tb Oil

Preparation:

Icing
125-150g chocolate
100ml cream
1min in the mircowave oven on high
Stir and then pour over cake
or
only dust cake with icing sugar.

Instructions:

Mix in food processor/blender until smooth.
Pour into grease lined slic tray
20-25mins 190C

Parmesan Chicken
Description: Andy and I tried it when he was here and we loved it. As Andy does not drink any alcohol we did it without the wine and used butter instead.
Time: 60 minutes
Difficulty: easy

Ingredients:

1 (2 to 3 pound) whole chicken, cut into pieces
5 g salt
0.5 g ground black pepper
0.7 g garlic powder
0.6 g paprika
0.4 g dried thyme
50 g grated Parmesan cheese
4 g chopped fresh parsley
55 g seasoned dry bread crumbs
55 g butter, melted
120 ml dry white wine

Instructions:

Measure salt and pepper, garlic powder, paprika, thyme, Parmesan cheese, parsley, and bread crumbs into a bag. Shake chicken pieces in bag until well coated.
Oil roasting pan lightly, and arrange chicken in pan. Sprinkle with melted butter or margarine.
Bake, uncovered, at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven, and pour wine over all. Cover, and bake an additional 15 minutes.

Chicken With Crushed BBQ Chips

Ingredients:

1 pound of boneless skinless chicken breast cubed into bite sized pieces.
1 egg beaten
a splash of milk
4 cups of crushed b-q potato chips

Preparation:

Pre-heat the oven to 400 degrees F.

Instructions:

Beat the egg with milk. Dip chicken pieces into egg mixture and roll them in the crushed potato chips. Form a single layer on a non-stick baking sheet and bake for 10-11 minutes, or until the juices run clear. Serve with ketchup or honey dijon mustard.
